Sourdough discard tortillas are an adaptation of all purpose flour tortillas I use to make. These will up your taco night! All you need are 5 ingredients: sourdough starter, flour, salt, water, and olive oil.
The older I get, the more I realize that things I thought I had to buy at the store are simple to make at home. Making sourdough tortillas is one of those easy things to make yourself.
Sourdough discard tortillas allow you to make quick wraps for lunch with leftovers or you can even bread them apart to dip them in hummus. Wraps are something we eat often in the warmer months so that our stove or oven isn’t heating up the house (especially since we’re living in an apartment without air conditioning right now!)
How to Prep Sourdough Discard Tortillas
Nourishing Traditions book by Sally Fallon talks about the importance of fermentation and how it helps our bodies better digest flour. Although I don’t always allow these to sit for 12-24 hours like the book recommends, I do try to let our flour things sit for at least an hour.
So, if you’re prepping and have the time, by all means, oil a bowl and allow the dough to sit in there for 12-24 hours. But if you haven’t prepped and are trying to make these in a pinch, you can make these right away. I went away from fermenting and what not for awhile and would make these. They turn out great either way.

Don’t have a sourdough starter?
Here is how I start my starter and feed it.
Having a sourdough starter allows you to make all sorts of recipes. Sourdough burger buns, sourdough sandwich bread, sourdough waffles, sourdough no knead bread, sourdough discard crackers, and more can all be made from your starter.
Like I mentioned before, souring or fermenting your breads via a sourdough starter helps your body more easily digest gluten. It also breaks down antinutrients and helps your body more easily absorb the nutrients there.

Sourdough Discard Tortillas
These sourdough discard tortillas will up taco night in your house! You can use these as wraps for lunch or with your favorite taco recipe.
Ingredients
- ½ cup sourdough starter, active or discard
- 3.5 cups all purpose flour
- 1 cup water
- 1 tsp salt
- 6 tbsp olive oil
Instructions
- Mix water, olive oil, and starter together.
- In a separate bowl, add salt and flour. Stir in wet ingredients, although using your hands makes this easier!
- If you find the dough too sticky, slowly sprinkle in more flour. If it's too dry, slowly add 1 tsp of water at a time.
- Knead for 2-3 minutes then allow to rest for 1 hour in a covered bowl that has been oiled.
- Divide into 12 equal parts on a floured surface. Meanwhile, heat up your oiled cast iron pan over medium heat.
- Using a rolling pin, roll into thin, circular dough.
- Cook tortillas for 1 minute on each side.
