This sourdough discard dutch baby pancake recipe is super easy to make and a hit at our house. There is no waiting around or prepping needed, just use your sourdough discard! Made with seven ingredients, this delicious puffy, custard like pancake can be topped with a variety of toppings that your family loves.
Sourdough Dutch baby pancakes, or German pancakes, are perfect for breakfast and brunch. This recipe only uses maple syrup for a sweetener, so you do not have to worry about them being overly sweet.
You need to make sure the batter is whisked together well, or you can opt to use your blender. Then pour is into a hot cast iron and listen to the sizzle! They are a quick breakfast as they do not take long to whip up and only bake for 15-20 minutes, meaning you can get them made in a pinch.
I usually love making sourdough waffles, but they require a lot of clean up and me watching the waffle iron to see when the next one needs poured. These allow me to make them up and then not think about them until the timer goes off, giving me some time to clean up in between making and baking.

Are Dutch baby pancakes and German pancakes the same?
Yes. Dutch pancakes originated in Germany, not the Netherlands. But it is thought that it was mispronounced “Dutch” instead of the German word for German “Deutsch”. Just a side fact, in German, pancakes are “pfannkuchen”.
Are Dutch baby pancakes the same as regular American pancakes?
No! In my opinion, Dutch baby pancakes are WAY better. They have a custard like inside that is not overly sweet. Dutch baby pancakes are made with a thicker batter that has more eggs and less milk.
What toppings do you put on top of a Dutch baby pancake?
Honestly, berries and powdered sugar are all about we do! I even let frozen strawberries thaw a little then slice them up in the wintertime (when I tend to make this more often). Fresh squeezed lemon, maple syrup, and butter are also some great toppings.
Another favorite I like to do it chop up an apple. Saute it in some butter then add some sucanat or sugar and cinnamon. Then you’ve made some cinnamon-sugar apples to put on top.
How do you store your leftover Dutch baby pancakes?
If you have any leftovers, store in an airtight container for 3 days in your fridge. Then, reheat in your oven or microwave.

- Make sure you cast iron skillet is nice and hot with melted butter! But if you have leftover food in your skillet, be aware your pancake may puff them up and have specks.
- If you want a good rise for your sourdough discard Dutch baby pancake, mix then refrigerate your ingredients while your oven preheats.
- Ensure all the clumps are out with a good whiskin’! Alternatively, you can place all the ingredients in your blender and blend until smooth.
- Do not open your oven until your sourdough Dutch baby is ready! The cold air can deflate it.

- whole milk – We use raw milk we buy from a local dairy farmer. Using whole milk gives it a richer flavor as you have the full fat content.
- eggs – Preferably pasture raised if you can find them.
- butter – This is another thing I enjoy making from raw, cream. But you can certainly used homemade or use a grass fed butter if you can find one at the store.
- maple syrup – You can also try substituting this for honey

- Place your cast iron skillet with the butter in your pan into the oven.
- Preheat your oven to 425*f with the skillet and butter inside.
- Add the rest of your ingredients to a large mixing bowl.
- Whisk together OR put into a blender and blend until smooth.
- Once the oven is preheated, pull your pan out of the oven.
- Pour your batter into your skillet.
- Replace your cast iron into the oven.
- Bake for 15-20 minutes.
- Use your oven light to see if your Dutch baby pancake puffed up some. This is how you will know it is ready!
- Serve immediately with your favorite toppings.

Ingredients
- ΒΌ cup butter
- 5 eggs
- 1.5 cup sourdough starter discard
- 1 tsp salt
- 1 tsp vanilla (or lemon juice)
- β cup milk
- 2 TBSP maple syrup (or honey)
Instructions
- Add butter to a 9 inch cast iron skillet.
- Place cast iron with butter inside in oven.
- Preheat oven to 425*f.
- Whisk the rest of your ingredients in a large bowl.
- Once the oven is preheated, pull cast iron out.
- Pour batter into your hot skillet.
- Put back into the oven to bake for 15-20 minutes.
- Use your oven light to check on your Dutch baby pancake instead of opening the oven door.
- Once it has puffed up some, it can come out!
