Know those super convenient taquitos in the freezer section? If you’ve ever flipped them over and looked at the ingredients list, you’ll find lots of preservatives and questionable ingredients. So I’m typing up a quick and easy recipe that Justin likes to make on the days I’m working.
I like corn tortillas, but they take a little longer to prep because you can’t pull them out of the bag and roll them. They need to be heated up and moistened a little bit to roll without breaking. If you want to just throw in your fillings and go, use flour tortillas (but try to find sprouted grain!)
Oven Baked, Black Bean Taquitos
- Ingredients
- 1 can black beans, drained & rinsed
- ½ c diced onion
- ½ c diced red pepper
- ½ c corn
- ½ tsp cumin
- ½ tsp garlic powder
- ¼ tsp paprika
- ½ tsp oregano
- 1 Tbsp cilantro
- 12 corn tortillas
- 1 avocado
- salsa
- olive oil
Preheat the oven to 400*F & heat up the corn tortillas.
Mix your beans, onion, corn, pepper, and spices together.
Scoop 3 Tbsp of the mixture onto the side of the tortilla & roll it up.
Place it seem side down on a baking sheet with parchment paper.
Once they’re all rolled, brush with olive oil.
Bake for 15-20 min, or until crispy.
Top with sour cream, avocados, guacamole, or whatever else your heart desires! Justin enjoys dipping them in salsa too.
If you think you’d want them as a ‘pull out of the freezer’ type meal, individually wrap them in aluminum foil then place them in a container or freezer zip lock to store in your freezer. Then you can just pull them out and heat them up!
