Good food, good mood!
Sometimes I feel like dealing with Daylight Savings time and little humans is worse than a full moon as a nurse. In Germany, we “fell back” last weekend (a week earlier than our family and friends in the US). The spawns seem to think this is a reason to wreck havoc in our house…getting up an hour earlier, Stella running Nora over with her baby’s stroller, Nora throwing herself on the floor more often…ya know, toddler and infant things. 😩
To help combat the lack of sleep, I’ve been making overnight oats. They’re yummy, easy to make, healthier than frozen waffles or cereal, and ready as soon as we’re up. Instead of having to cook the oatmeal, I’m able to serve the girls their food while I, groggily, make a cup of coffee. I was browsing Trader Joe’s website about a year ago when I found this recipe and love using it. It’s so easy to modify and make your own. You can add a little cocoa powder and peanut butter, raspberries and walnuts, cinnamon and apples, or whatever tickles your fancy! Here’s the link.
Quick and Easy Overnight Yogurt Oats
This is a great recipe to throw in your fridge before bed then it be ready to eat in the morning! Feel free to add some protein powder, but be sure to add a little more liquid then!
Ingredients
- ½ cup oats, old fashioned or quick
- 1/4 cup yogurt, if you use unflavored, add a sweetener
- ½ cup almond or oat milk
- 1 TBSP chai seeds
Instructions
- Mix all the ingredients together in a mason or other glass jar
- Sit in your fridge for 8+ hours
- Top with almond or peanut butter, chopped nuts, or fresh/frozen fruit
- Enjoy cold. You may need to add some more milk if it's thickened too much.
That’s it! Super easy. Thought I’d share since we’re sitting around our house today waiting for the beds we bought to be delivered. I love looking back at recipes my grandma use to make and am hoping to get all my favorite recipes in one spot so I can make a recipe book for the girls one day.
