Using a sourdough pizza dough over a store-bought yeast pizza dough has become a favorite of mine. Not only does my pizza dough have a hint of tang to it, but my crust ends up fluffier, yet still crunchy, without being burnt on the bottom. Which is what I hope for in my pizza crust. t. The first time I made this recipe, I doubled it and made two large pizzas because we had friends over. Also, if it’s summer and you have fresh basil in the garden, it’s delicious on top of here!
sourdough pizza dough has no yeast?
If you have your own sourdough starter you may, or may not, know that a sourdough starter is made from ‘wild’ yeast. That is, the yeast that is naturally occurring in your flour. This is why you’ll see many sourdough starter how tos recommend whole wheat and even organic all purpose flour.
Much like when you make sourdough bread, sourdough pizza dough has no yeast added, the yeast that is naturally in the flour takes over. It’s also why sourdough pizza doughs may need to sit at room temperature longer to ferment but still produce a light crust with air bubbles!

- Why is my dough crumbly? Depending on how hydrated your starter is can affect your dough. Also, the temperature and humidity in your home also play a role on your pizza dough. Add a tablespoon of water at a time to get the desired texture.
- Why does dough turn into sticky dough instead of staying in a ball? Same at the above, except this time, add a tablespoon of flour instead of water.
- Can I freeze this sourdough pizza dough? Yes, but after the first rise time (it’s delicious though, you need to make both pizzas.) 😉
- My dough did not rise! Two things immediately pop into my mind. The first is, you have a newer starter. These can take some more time to rise. The second is, where you placed your dough is more on the chilly side. To remedy this, place your dough in a warm spot, like next to the stove while you’re cooking or even turn on the oven light and stick it in there. This will help your dough rise.
- Can I use my sourdough starter discard? Yes you may, but it may not be as airy than if you had used an active, bubbly starter.
- What type of crust does this recipe make? If you split the dough ball into 2 equal parts, then you will have 2 thin-crust pizzas. Do not split the dough if you would rather have a thick crust pizza.

How to make no yeast sourdough pizza dough
- Mix all ingredients into a large bowl. If using a kitchenaid, use your dough hook. The dough will be a little sticky.
- Place in an oiled bowl and cover with plastic wrap or beeswax wrap for 8-24 hours. (If you allow it to ferment closer to the 24 hour mark, you may need to sprinkle some more flour on your dough before working it.)
- The next day, divide dough into 2 equal pieces.
- Roll out on a lightly floured surface or use your hands and press your dough down into the shape you want.
- Preheat over to 400*f.
- Let your dough sit on your work surface for 15-30 minutes as your prepare your favorite toppings.
- Add pizza sauce, toppings, and cheese.
- Place on a piece of parchment paper.
- Bake for 15-18 minutes. Switch to a broil for 2-3 minutes if you want the cheese extra brown on top!
- Allow to cool then enjoy.

- 2.5 cups flour
- ½ cup water
- 1 tbsp olive oil
- 1 tsp salt
Instructions
- Mix all ingredients into a bowl. If using a kitchenaid, use your dough hook. The dough will be a little sticky.
- Place in an oiled bowl and cover with plastic wrap or beeswax wrap for 8-24 hours. (If you allow it to ferment closer to the 24 hour mark, you may need to sprinkle some more flour on your dough before working it.)
