Sourdough pumpkin waffles are a great option for fall! After you’ve pureed your jack-olatern from halloween (or a sugar pumpkin you picked up while at the patch), you can create these delicious waffles. Of course, you can used canned purée too.
After making my instant pot pumpkin puree, I’ve been going hog wild on the pumpkin recipes. The girls and I enjoyed some sourdough waffles a couple of weeks ago, so I decided to try them with pumpkin. They did NOT disappoint! If you want to begin making sourdough recipes but don’t have a sourdough starter, here’s how you start one.
Why Add Pumpkin to Your Waffles
Pumpkins aren’t just fun to go to the pumpkin patch to pick out, but they’re also a great fall staple. Pumpkin is packed full of nutrients including fiber, vitamin C, potassium, and phosphorous. It’s also a good source of vitamin E, riboflavin, copper, and manganese. The nutrients in pumpkin can help to support healthy eyes, a healthy immune system, and skin.

How to Prepare For Pumpkin Sourdough Waffles
Some sourdough recipes call for an “active” starter while others call for “discard” starter. Active starter means you fed your sourdough starter a few hours ago, it’s grown in the past few hours and is bubbly. Discard is what you get after your starter has sat in the fridge or when you’re about to feed it. Both can be used in this recipe since we add baking powder to it. I personally usually have an active starter since it’s cooler and I’m making sourdough bread, biscuits, etc. Plus, I just enjoy seeing my starter active.

Pumpkin Sourdough Waffles
These waffles are the perfect fall treat! Pumpkin sourdough waffles can be eaten for breakfast or top with whipped cream or vanilla ice cream as a dessert.
Ingredients
- 1 cup pumpkin purée
- 1 cup sourdough starter
- 1.5 cups all purpose flour
- 3/4 cup water
- 1/2 tsp salt
- 1 tsp vanilla extract
- ½ cup coconut oil, melted
- 1 tbsp baking powder
- 1/2 tbsp pumpkin spice
- 2 eggs
- 1/2 cup honey
Instructions
- Preheat waffle iron while mixing ingredients.
- Mix all dry ingredients in a bowl. Make a well in middle.
- To well, add the sourdough starter, pumpkin purée, eggs, water, and honey.
- Mix all ingredients together until there are no clumps.
- Wipe waffle iron down with butter or spray with spray oil.
- Cook for designated time for your waffle iron. Enjoy
Notes
We have a large waffle iron that makes a large circular waffle with 4 quadrants. Depending on the type of waffle iron you have will depend on cooking time and how many waffles you get.
Serve with butter, maple syrup, almond butter, or whipped cream.
